POSITION!POSITION!POSITION! Anyone interested in absolutely beautiful waterfront blocks of land. Have 30 acres (only 15 acres underwater at this stage), sewered, watered and electricity. Glorious seabreezes and waving palm trees (in pots). Plenty of wild duck and small wildlife - large centipedes, snakes and zillions of lizards heading for higher ground. Good rainfalls - varying temperatures. Apply here. POA.

Was wondering which one of you boys had nothing better to do today!! Could've guessed. It's blowing too hard to launch the windsurfer. Shouldn't need to pump yabbies Oskar, because when it drops enough we should be able to hop in downstream side of the causeway and throw them up onto the bank into the eskies.

RECIPE FOR TUFF OL' 'MU - as Mrs Beeton used to say, first catch the 'mu. Then, take a clean saucepan. Cover the 'mu with water - after taking off the fevvers - then drop in a large river stone. Light large fire under pot and when water has boiled for several hours, test stone. When stone is soft, eat 'mu.
Seriously, when the French were out here in their old Citroens a couple of years ago and they wanted a feral lunch at Big Red - one of the items on the meandu was 'mu rissoles. Yumm yumm - better than wild duck even.

recipee for emu pie.
first of all remove rather bigish head to big for body lol.
Emu Pie
Main meal dish with individual emu pies with pepper berrie sauce
Serves 2
Degree of difficulty: Medium
Preparation time: 40 minutes
Cooking time: 20 minutes
You need:
1/2 kilo of emu rump
2 teaspoons of avocado oil (macadamia or olive if unavailable)
handful of pepper berries
2 onions
1 1/2 cups of red wine
1 cubed/skinned egg plant
2 cubed/peeled sweet yam (the orange ones)
2 cups of beef stock - leave a little for sauce.
brussel sprouts
cauliflower
carrots
young green beans
packet of puff pastry or shortcrust pastry - (unless you want to make it yourself)
Blue gum honey
Meat Mixture.
method
Place the the cubed emu rump, cubed and skinned eggplant and sweet yam in a large pot.
Pour in 2 cups of beef stock and cup of red wine.
Throw is about 3 - 4 pepper berries (not to many as they are hugely flavoursom)
Leave to stew for about 30 mins stirring every 10 mins so the mixture doesn't stick to the bottom of the pot.
The eggplant breaks down and creates a fair amount of water. the mixture will reduce considerably.

So add about 2 tablespoons of flour and a tablespoon of butter and thicken the sauce - enough for pies.

The Pie Making
Make pastries squares roughly 15cm square.
Make smaller squares and place in the middle of larger squares to strenghten the pastry where the meat sits.
Add about a 2 heaped tablespoons of meat in the centre.
Pull up the sides of the pastry to make a parcel - and pinch in the middle.
place in a moderate oven for rough 15 - 20 mins

The Sauce
1 sliced onion
sprinkle in more pepper berries
splash of wine
splash in beef stock
2 tablespoons of blue gum honey
Cook sauce until it reduces a little
Pour over pies once the pies are cooked.

Here is the recipe for your road kill mu.

Cut about 3kg (6 pounds) of the chump end of the leg with a sharp knife, making one cut remove the bone. Fill the cavity with stuffing (any bread stuffing with seasoning will do). Secure with string or skewers placing in your camp oven. Add 3 cups of water and a cup of dripping. Simmer until the water has gone, braise in the remainng fat for about 3 hours or until tender.
