255/70R16 won't give you any significant problems. The overall diameter is exactly 15mm larger than the largest tyre certified for Jackaroo. So you are within ADR guidelines and remain legal.
In theory they will put out your speedo out by 2%, which shouldn't be a big deal. Performance wise, any impact should be negligible.
Widetrack Troopers in the US are known to be able to take 275/70R16
tyres without any rubbing or other problems. However that practice is illegal here without getting an engineer's certificate.
