Go the 265/75.
I've run the 265/75 Goodyear MTRs on mine now for 35,000km without any issues, and they have done a heap of outback stuff, and still 9mm tread left.
I use that size because it fits nicely on the 16x7 rims, come with stronger LT construction, and they are the same diameter as the common 750R16, or the 235/85R16. The latter can be fitted to your 7 inch rims if you had to. Most brands of 265/70 are P (passenger) construction, and have lower load index.
Some of us carry a split rim with 750R16 as a spacesaver extra spare.
the mags which come with the 79series RV look pretty strong, so I'd be inclined to use them. I wouldn't personally drop back to split rims - used them for many years, and happy to see the end of them.
