I've been there/done that. It doesn't work well enough. Those converters lose a lot of resolution when you hook them up to a 7 inch screen. And your screen only has "composite video" input. You can't make it better with what you've got.
The only way you'll get a clearer image on that 7 inch screen is if your laptop has an "S-video output" or a "Composite video output", and you can then use a simple cable (not a converter) to connect them.
If you're serious about it, you need a new 7" screen with a VGA input - then you use just a simple VGA-VGA cable to connect your laptop to the screen, and no resolution is lost.
