We are doing a trip to the Simpson in June (Hay River) just wondering the best way to carry fresh vegies, we are experimenting with Cryvac, so far potato pumpkin carrot etc seem ok if refrigerated but not sure about soft vegie like lettuce, all suggestions gratefully received.

We travelled the Hay River last year...Fantastic trip.

Potatoes, onions and tomatoes we wrapped in layers of newspaper and put into a reinforced cardboard box in between the kids in the back seat this is the coolest spot.
We washed and cryvac'ed serving sizes of beans, snow peas, refrigerated vegies etc. As for lettuce we washed and layered it into a thin tupperware container, this went all soggy probably because our fridge was cycling around 0 to 3 degrees.
However If we had placed the lettuce at the top of the fridge rather than the centre we felt it would have had a better chance.

You are right. I tried the lettuce up top in the Waeco 80 and it was perfect for over 2 weeks. When I ditched the last of it ,it was still useable.

Richard, we have a great deal of sucess using ethylene absorbing bags (best in the fridge). If you can't fit some veggies in the fridge be selective what you keep out of the fridge ie cabbage, brussel sprouts, spuds, sweet potato, carrots - put them in these bags & store in cardboard boxes (In June these veggies should stay relatively fresh for 10 to 14 days in this type of bag outside the fridge). Keep the boxes well insulated from the floor of the vehicle as it gets very warm at slow speeds.

In June the night temps will be just above zero, so vegs keep well without refrigeration. We use the cardboard box and wrap potatoes, sweet potatoes, onions etc individually in Newspaper. Carrots don't keep as well, so keep a couple in the refrigerator.
Peas - we like the tin peas and corn with the lift up tops - the heat up well on a hotplate or fire, so have stopped taking them fresh. Cauli and broccoli - some wrapped in newspaper and a few in the fridge if you want.
Pumpkin is about the only veg we successfully cryovaced - but it would be OK anyway in June.
