Mussels Portuguese
Ingredients:
½ kg mussels (cryovac'd from Supermarket of fresh)
150 g butter
2 bay leaves
½ cup cream
juice of 1 lemon
1 small chopped onion
1 sprig parsley
1/2 cup white wine
1 teaspoon crushed garlic
1 tablespoon oil
Method:
1. Scrub mussels and discard beards.
2. In a heavy frying pan or
camp oven over high heat, add oil and
cook garlic.
3. Add onion and saute till half cooked.
4. Add mussels, butter, bay leaves, parsley, lemon juice salt and pepper, cream and wine.
5. Cover with lid and continue to
cook on high.
6. Drop in mussels and when opened they are cooked.
