I have recently changed my diff oil and found what looks like steering knuckle grease in the oil. I have been told that this probably means my diff oil seals have gone. if this is the case why isn't there oil leaking back the other way. if the seals are gone, will this affect the diff oil and eventually the diff itself.

Stan it looks like the half shaft oil seals have gone which will let diff oil out into the swivel joint and wheel bearings. Grease in the diff won't hurt it but can lead to wear and other problems with the CV joints and wheel bearings.
Check the diff breathers are not blocked. The half shaft oil seals are cheap but it is almost a full days work to change them as the wheel hub, stub axle and half shaft have to be removed. If you get this done have everything wheel bearings, swivel bearings and CV joints checked and if their is any doubt renew them as
well.
