2 Queries: Fridge/freezer setting & Canvas advice

Hi Guys
Learning all the time! Went away for 3 day weekend as a small
test run. Two Questions to see what's out there:
1) Set Waeco CM/40 for -2degrees (it was empty) for 24hours for before leaving. Loaded pre-frozen meat (in plastic bags) in bottom (to height of about 150mm) with 2 sheets of plastic notice cardboard type of stuff on top, then placed vegies (also in plastic bags) on top of that. After 6 hours travelling, meat was loosing it's hard freeze feel. Okay 1 st night. Next stop following night, meat was still getting softer & some of the vegies were getting frozen? Turned fridge down to 0degrees to stop freezing vegies, but couldn't really tell if it helped at next stop. What setting should I be using?
2) Have 2 (Supercheap) Roof Bags & other stuff outside bags that I want to place inside & protect with good quality (canvas?) bags specifically designed/made for the purpose. Is canvas the best way to go here or extra tough plastic tarp? Any recommendations on who to use for making extra bags?
Thats really 3 queries: freezer setting, canvas Vs plastic trap & bag maker? I say this because while I always appreciate any comments, often I find I never get the issues specifically addressed.

Well i don't mean to be condescending but the problem is, as with my FF30, they are fridge or freezers, not too good at being fridge and freezers.
My only thought is the important thing is the meat, now if it came out of the domestic freezer for a week it probably went into the fridge at about -18. So yes it will deteriorate at a setting of -2.
The only thing I can think of is put the setting at -10 and place your styrofoam plate at the top separating the meat from the vegies, but also put the vegies in a soft esky to keep the cold out. Experiment with a thermometer in the soft esky.
Not saying this will work but it might.

Dont think you will have much success trying to keep stuff frozen and cool at same time, unless you get some sort of insulator to stop veggies freezing, but even in a box or something they will freeze in time.
When I go away, i run an Engel and its always on freeze about -10 or less, and I run an esky as a fridge which i use frozen 1ltr containers as block ice in esky, and keep a couple spare in Engel frozen solid and swap them each day.
that way they never defrost totally, your freezer doesnt have such a job to refreeze, your esky is always cold, and your contents are not wet n soggy.
Get best esky you can afford, you get what you pay for in them.

I agree Ron, that's exactly what I do - works a treat. Each morning I take out the frozen food I need that day and put it in the esky with the swapped ice block. I swap them again last thing at night so only open the freezer twice a day which helps its performance.
