Hey mate... hardest part is trying yeh!

Brown your 2 chicken breasts ....(in knob of butter sliced onions and bit of garlic)
add cup of chicken stock... (1 cube will do)
give it all 5 mins just bubbling away...
remove chicken and put in oven just t keep warm...
add cup of wine to the stock
chuck in the mushies and bring back up to simmer.....
200gms (ish) mushies sliced pretty thin then chopped again (diced if you like)

add small tub of thickened cream...
stir away till you see it reducing/thickening a bit...add salt/ pepper.....

yer just about there mate.....

Nooooooooooo don't keep tastin it.... you'l have none left for the chicken!! lol

Enjoy.

I don't think there is a better or best way .. whatever you like is best for you. I like them fried, as you do, but I also like them grilled or bbq'd with butter and garlic.

There are also a million recipes for stuffed mushrooms. Google will give you enough to keep you in mushroomheaven for a few years.

thats it, there is NO alternative, add a dash of Garlic and if big mushies break off the stems and fry then top down, fill the center with bacon bits and the diced up stem, maybe a tiny bit of onion and sprinkle grated Motzy cheese over the top, melt the cheese and enjoy ............
Basically you can fill the centers with what you would normally top any pizza with, top it with cheese and melt cheese ... awsome meal...

Chop them up. Add butter and wrap in foil.
Place in pan or on BBQ for about 10 minutes.

G'day Axle, when I eat mushrooms I like to taste the mushroom. Very moorish and like you, fry them gently in butter gill side down first, turning when juice starts to flow and remove from heat when mushie flattens under gentle pressure from a egg slice. I always peel the skin off the mushroom. I should have horseshoe mushies coming up in my back yard after nextweeks sunshine. YUM.

Fry them in vegetable oil, and at the end when they are mushy a small splash of soy sauce, 5 star hotels do it. It gives them a similar nutty salty taste to lots of butter with a fraction of the fat.

Axle, the best way to eat mushrooms is the way you cook them, that is the only way I ever cook mushies, I do peel them though.
I am the only one in the family that eats them so I fry them in butter, pepper and salt to taste and on some toast, yum.

Cheers

I learned a great way to cook them in Korea.

Get some large mushrooms and make sure they don't have any tears or cracks in them. Cut off the stem.

Add NOTHING. Place them on a BBQ grill for about 30 mins over coals. They are cooked when they are full of water. It is amaizing where it comes from.

Delicious. The juciest Mushrooms you will ever taste.

I like the big "half-plate" sized ones. I'm always the first one up in the morning either camping or at home. I keep it simple, get a pan hot with lots of butter, not margarine, cut a reasonable hole in the center of the mushroom and then crack an egg in the middle. A bit of salt & pepper, a cook to taste. Have with a nice hot cuppa.
It doesn't get much better than that!

That's the way alright for them big fella mushies Capt.

Don't chuck the stem out. Cut it in slices, cook and spread on top of the egg.

A dob of sour cream on top is good too.

Now, I gotta go and get some mushies.........thanks Axle.

Wipe mushrooms with damp paper towel, don't wash in water or they will go soggy. Chop if large and gently fry in a little butter (NEVER margarine!) . When nearly done add a squeeze of lemon and some chopped parsley. You don't need a lot of butter as the mushrooms soon make plenty of juice.
If you want to reduce fat try brushing largish mushrooms with a little olive oil and cooking on BBQ plate (not too hot) with a squeeze of lemon and a little salt.
It's hard to go wrong with mushrooms! All methods are great and they are good for you as well! You are lucky if you get them to yourself. I have to fight for my fair share! Lynne

Hi Axle, your post about cooking mushrooms brought back some memories for me!
Back last century when I was a young fellah Mum used to have a wood fired Metters stove in the kitchen & she took heaps of pride in it's upkeep & appearance. She used to use a product called "Zebra" (I think that was the name) which was a black polish of sorts which she applied to the stove top to make it a nice black lustre.

Anyway at certain times of the year wild mushrooms would grow in abundance in the area where we lived & us kids would pick them by the bucket full. If Mum was out of sight we would peel the skin off them & place them on stove top, stem up. We would then sprinkle them with salt & flatten them down with a knife. The result after a minute or so was the best tasting Mushrooms of all time!

Trouble was the combination of heat, salt & moisture made one hell of a mess of the top of Mum's stove & all hell would break loose when she re entered her kitchen & saw the mess we had made on her good stove .LOL

I still cook them that way on our BBQ now & then & still have a chuckle over Mums rantings from those days. Cheers
