Camp Oven Smoked Chicken

Smokey Flavored Chicken


  • 1 Chicken
  • 1tblsp Rum (optional)
  • 1 tblsp Honey
  • Coarse Salt
  • Sawdust or small wood chips of strong aroma for flavor... eg Eucalypt or pine)


  • Step 1Place sawdust in camp oven to cover bottom, about 1cm deep.
  • Step 2Place cake rack or wire trivet over sawdust so as not to touch sawdust.
  • Step 3Rub chicken with salt and paint mixture of rum and honey all over chicken with a pastry brush.
  • Step 4Put chicken on small aluminium pie plate (or folded foil) tucked around to keep from touching sawdust, and place on cake rack in camp oven, and cover with lid.
  • Step 5Sit camp oven on hot fire/ not lift lid for 15 minutes.
  • Step 6After 15 minutes, baste chicken with remaining rum & honey, and cook for another 15 minutes, or until cooked and golden.
  • Step 7Serve with roast vegies prepped and cooked in another camp oven, or on the hot-plate, or wrapped in foil and baked in the coals! Enjoy!
