Easter Road / Off Road Trip

Hey all, a few friends and I will be heading out for the
Easter long weekend. From
Brisbane we're thinking of pointing the nose toward
Longreach, preferably off road, and seeing how far we get in two days before turning around and heading
home. Has anyone got ideas for where might be good - more interested in mild off road and distance in preference to slow heavy off road, and nice camping spots by a river. Looking to avoid asphalt as much as possible.

Don't know about avoiding rhe black top but two days from Brissy won't get you too far, I'll throw in a few ideas.
