We are considering getting a fully enclosed "toy Hauler" trailer made and want to add some windows, who are the more reputable window suppliers. Dometic seem to have a good range available.

You will need deep financial pockets to maintain the Dometic windows.
I am far from fussed on the quality of materials to the suitability of the Australian climate.
The price of Dometic replacement parts in Australia is nothing short of extortion. Some Dometic parts can be purchased offshore for between 20% to 40% of Australian prices.

My recommendation would be Australite Windows also known as Camec windows.
Parts are easily available and prices not to bad. Major advantage made in Australia and when the Australian economy crashes in the future your dollar in Australia will still be worth a dollar to buy Australian parts.
