John it is possible to move pictures and their captions when you are in "edit blog" mode. Find the relevant link in the text, highlight all of it and cut and paste as you would for normal text. However in the final layout you don't have a lot of control over the exact positioning of pictures in the text.
As far as I know it is not possible to edit the caption other than deleting the link and uploading again with a new caption.
To get pictures arranged in Family/genus order I think it might pay to set up a framework or list in text and then insert pictures under their relevant genera. Use plenty of spaces to ensure that the pictures don't spill into the next category though.
