Bung in Damper
My wife makes a mean damper, but she doesn’t measure the ingredients exactly. She uses three handfuls of this and two handfuls of that.
Below find the quantities as close as I can get them.
The recipe
3 cups of self raising flour
3 tablespoons of Sunshine milk powder
3 small handfuls of sultanas
2 table spoons of sugar
1 tea spoon of salt
Mix all of the dry ingredients thoroughly and when satisfied they are thoroughly combined, slowly add room temperature
water and keep stirring the mix until all of the dry ingredients are combined. Make sure the mix is wet but not runny.
Before mixing the ingredients, get your
camp oven out and pre heat it by the fire, don’t get it too hot though.
Place the mixture in the
camp oven for cooking and start cooking.
The damper can be eaten hot with butter, margarine, peanut butter, jam or just plain. We’ve even served it whilst it’s still hot in a bowl with custard over the top as sweets.
You can vary the above recipe by removing the sultanas and replacing them with cooked chopped onion and bacon or dried apple or dried apricots or cheese and cooked bacon and so on.
