I love to make this Easy Mud Cake. It is so moist and a real favourite

1 Cup Hot Water
1 1/2 Cup Sugar
125g Margarine
1/2 Cocoa

Place above ingredients in a saucepan and simmer over low heat for 5 mins, Add 1/2 teaspoon Bi-Carb Soda
Add following ingredients and mix well.

2 pkts Chocolate Instant Pudding Mix
1 1/2 cups SR Flour
4 Eggs (Lightly Beaten)
1/2 cup Oil
1 teaspoon Vanilla Essence

Grease a large ring tin or a large cake tin & line with baking paper. Pour mixture into a cake tin and bake for 50-60 mins or until cooked in a moderate oven.

When cool ice with chocolate icing made with

1 1/2 cups Icing Sugar
1 Tablespoon Cocoa
1 Tablespoon Butter
Enough water to make a spreadable mix
