I'm heading to
Exmouth soon and im wondering if I should carry some spare parts for the car, just incase. Hoses etc... Im camping in parks the whole time and doing beach fishing.

I am sure you know the best way way to ensure you will never need spares is to take them!
Given the age of the ute, the time of year and where you are going I am not sure I would bother.
It is not as if you are heading hundreds of km out in
the desert in the middle of summer where the cooling system will be stressed.
In my travels on some remote roads and tracks in the company of others I have never seen a blown radiator hose or busted belt. I have a six year old
Ranger with still the original hoses and belts in good condition but will probably look at replacing them as a precaution before the next big trip.
I expect some people will disagree ...

It has been a practise of
mine all my driving life to carry a spare hose and fan belt. We used to also carry a pair of side cutters, spare thermostat cover gasket and gasket goo.
Probably no need for you to do that now however do recommend you change your thermostat.

IF your vehicle is properly maintained, it is unlikely to be troubled in anyway by your intended cruise up there*. Over quite some years I've carried various 'just in case' spares (which all add up $$$) and they never came out of the box. I now carry a few light tools,
minimal heavier tools, a couple of filters, various tapes and cable ties.......and get on with it :-).
*what a region up there....you are in for a real treat.....have a great trip.
