What's the best product to put on the steel tray back under an aluminium checker plated canopy? Thanks.

Grant, you mean a covering to protect the steel tray ? (Not insulation under the canopy.)
Have you seen the Rhino coating ? Very tough.
Other than that, would suggest marine type carpet, spray glue adhesive.

Rhino coating is a good product yes, but not sure that marine carpet is a good idea though, think maybe any water and moisture that does manage to get between canopy and floor may cause rust issues.
Depending of course if canopy has its own floor or not.

I have Rhino coating in the tub of my BT 50 It prevents moisture and rust, it`s non slip and easy to clean. 4 mm thick on the floor and tail gate, 2 to 3 mm on the sides.
