Can anyone recommend a good safe place to store our van in Alice for about 10 days while we cross the
Simpson Desert?

Have a look at Wintersun CP. I haven't used them for storage but have found them very helpful with other things.

We have left our vehicle and attached camper trailer at The Big 4 MacDonnell Ranges caravan park. The fee was quite reasonable. They have a separate area for vehicle storage.
