First up I am not very tech savvy. We have recently bought a 2017 Hilux with a screen in the dash. Looking to purchase EO traveller. Can I connect with the existing screen?

You can run Traveller on a phone or tablet but you cannot mirror it to your Hilux screen.
So to answer your question, No. You need a head unit that runs Android apps natively.
