The Gregory Development Road/Highway has plenty of gravel areas to pull over for an evening. You can identify some of these using the WikiCamps app. Eftpos wasn't working when I passed through Belyando Crossing in January, the staff took down my card details as I wasn't carrying cash - something to consider. If you continue further south of Emerald towards Injune, expect a couple of steep climbs along the highway. I was down to 5KPH behind a road train at one stage. Take your time and enjoy your drive :)
