David Ive heard that beef jerky/biltong which is dried and marinated meat can be rehydrated to make interesting dishes.Ive seen
recipes for omellettes,casserolles ect
Its easy to store, lightweight and can be bought in larger quantities at much reduced prices from factory outlets.

what faclities ie fridges/freezers etc have you got?
we had a 39L engel, meat all vacuum packed by our butcher, even some room left for a few cokes!
we wrap all our vegies individually in newspaper, keeps them ok.
dried food, rice pasta etc, easy to keep.
work out a menu for every day. write it down and calculate exactly every veg spud etc needed, plus a few days extra just in case.
also took 15 x 2L casks of shiraz as a weight/space vs cans/bottles exercise.
took me a week to get my teeth white and still cannot face a shiraz. good luck

The Canning is Magic!!!
If you run your fridge as a freezer you can easily store enough meat for 4 weeks worth of meals for two people (we vacuum pack it also anyhow). Margarine doesn't freeze - nor does jam and drinks can be cycled in and out. Milk can be cycled in and out so as to be thawed when required.
If you plan accordingly - you will end up with very little rubbish. We were a party of three vehicles, left nothing behind, and finished the canning with less than 1 shopping bag of rubbish for each vehicle.
You will have a great trip if you adjust typre pressures, and SLOW DOWN!!! Of all teh vehicles we came across with broken bits - 99% could be attrubited to overloaded
suspension with incorrect tyre pressures and sriving too hard! It's amazing how much difference 2-3 psi more out of your tyres can make if you are struggling!
Sorry if that's telling you to suck eggs - but I was amazed what I witnessed some gum-nuts doing!!!
Canning sunsets and night skys are soemthing else!
Cheers

Make sure you get a copy of the Gardes book "The CSR, A Travellers Guide' it has a wealth of info, lot's of great advice and everything you will need to know both before and during the trip.
Don't attempt to do it in less than 3 weeks on the actual CSR itself and heed the advice previously offered, you will have a great trip.
We did it with 2 adults, 3 kids in an overladen 1987 troopy in 92 and it was/is the BEST trip in 30 years of travel all over Oz.
