I am wanting to increase the size of my tyres on my GU Patrol from the standard 265/70 (~30.7" dia) to improve my diff clearance. I have a 2" lift kit fitted and want to know whether going to 285/75 (~32.9" dia) will be OK and not cause excessive rubbing on the gaurds?
Also, I use my vehicle for day to day transport but are interested in fitting BF Goodrich MT's as opposed to the AT's I have fitted now. I know the alternative is to get another set of rims but what mileage can I expect to get from the BFG MT's when I do ~80% travel on the tarmac? I get pi55ed not getting up those greasy hills with the AT's on!
Any information would be greatly appreciated.

Try searching the archives.
It has been asked about 10000000 times before.
Remember illegal to go 15mm bigger than standard.

I run 305/70/16s on my GU. They are almost the same diameter as the 285s (about 1mm difference)
The 305s don't rub at all and neither will the 285s
I also have friends with the 285s and they have no problems.
Sorry can't help with the second part of your question.

I have a GU with a 2" lift and BFG muddies in 285/75. No probs and couldn't be happier.

Truckster quoted the other day that a mate of his runs 36's with a 3 inch lift. I know of a guy that runs 33's with standard
suspension with no probs. 2 inch lift and 285's are a good mix!

And $350 for an engineers certificate to be legal - or the insurance company can wipe you in the event of an accident.
YMMV
