Don't have a solution, just some ideas.
Sounds like a
water flow problem, so have you checked the radiator internally & externally?
A soft hose could sucking flat?
Minor head gasket leak?
Thermostat not opening fully?
I have Terrano 2 diesel with exactly the same problem, I have checked all of the above & more. I am about to fit a high flow thermostat.
Mine runs fine 95% of the time, but if I work it hard, up goes the temp.
Fuuny thing I towed a CT all through the outback, temp remained below 1/2, soon as we hit the blacktop temp went up to 3/4.

My GQ did the same thing, it was the fan clutch.

1. Please don't yell. (Capitals)
2. As others have suggested, your viscous fan clutch isn the single most common cause of overheating. You can NOT test it while stationary. If you don't hear it "roar" when the engine is hot then it is not working.
It can be refilled with fluid- may help- or alternately a new clutch is the go.
Cheers

Fan clutch.... IMO I found it not worth renewing the fluid.... maybe it was just the guy that did
mine didn't do it properly but in any case it cost more in the long run so it would have been cheaper to replace the clutch in the first place.
The other thing is that
mine was doing the same thing but mostly without rhyme or reason until we discovered accidentally a loose earth.... obviously it was affecting the gauge!! Hasn't been a problem since!

how ya going , ive had a patrol for five years now and towed my boat and cars and never rev'd
mine over 3200rpm and i drive above the speed limit all the time. when ya rev it that hard it should get hot.

Another cheap fix on the viscious hub is to run a couple of tek screws through them. Only recommend it as a limp home measure, makes the motor work harder use more fuel etc.
Have you looked through(the cooling fins) on the radiator to check it's not blocked?
The fact that it cools down when revved (more air being pulled through the radiator) would point to a viscious hub.
But that doesn't mean that that's the problem ;-)
