Can anyone advise me on Reversing cameras for Towing vehicle and Caravan

I would definitely get one, from Jaycar, for both the towing vehicle and the caravan.

We opted for wireless, and the cameras arrived from Hong Kong today. Monitor is from a different Hong Kong eBay shop and is yet to arrive. In the first of the caravaner's forum threads above, several members have shown links to pictures of theirs in the picture gallery. I was surprised that more seem to have wired than wireless.

Yet to see how well ours works. We chose the same cameras as one of the caravaner's had used.

I have installed a PORON camera on the Patrol and it works well (but it's not cordless). We were part of a small bulk purchase cartel off this forum and cost was just over $300- (only included one camera, but there is provision to plug-in a 2nd camera which he would have supplied for $130-).
I've mounted mine up high on the roof rack, angled down so I can see the towbar. I can also see back about 20 meters behind the vehicle.
