I am considering buying a roll out awning with the ability to add
walls for a Jayco Outback Swan. Does anyone have any recommendations
and costs for one of these set ups.

I'll vouch for the Coolabah Awning/Annexe. Have one on the Silhouette and it's absolutely brilliant. Looks Like this:
