cobb cooking

went to the sandown [melb] caravan show and bought a cobb the new generation model [ stainless base ] with the frying dish .cooked my first roast to day with spuds and vegs,took a bit longer than they claimed but no problems, had heat left so cooked a packet cake tasted ok. PROBLEM the beer i put in the base [as in the reciept] must have burned away leaveing a mess and took a lot to clean, is water better , how important is the water can you put two much water in ,will it take away any heat. looked at some old posts and they suggested turn over the fire basket and put the beads on top to get the heat closer to the food any ideas

I just use water.
Or you can coat it very generously with oil and put spuds in there.
I normally use about 6-7 heat beads and turn the roast over once after 30mins and that's it.

The more you open it, the longer it will take.

We usually put vegies wrapped in alfoil in the moat - rub on a bit of oil, salt and pepper - mmmmmmmmmmmmmmm - might do one at home this weekend.

We use oven bags in ours to avoid the mess.

How do you use the oven bags? When we tried they just 'melted' and made it very tricky to salvage the roast of the moment.

Just ordinary Glad Oven Bags. Don't know why it didn't work for you. Can't see how they would melt. They don't melt in normal ovens.

We've done this about a dozen times so far. Subject to the size of the meat we like to use one bag for veggies & one oven bag for the roast. Easier to turn everything half way through cooking.

Give it another go, much better than cleaning up all the mess.

The BIG secrets:

1) Spray oil on the inside of the lid, the cooking base and the entire moat area. It makes cleaning a breeze.

2) I use water only - sometimes with some onion or garlic chips floating in it. Fill to the obvious line.

3) 1-1.5kg roast - stoke up with 8 beads, put the lid on AND LEAVE IT!!!!!!! Don't be tempted to keep checking it. Just walk away and come back in 1hr, 40 minutes. Perfect.

4) As soon as you are finished cooking, take out the heat bead basket and put aside. Tip out the fat and oil while it's still liquid (i.e. hot) and sit aside to cool, or douse on water immediately to nearly clean it in one go.

thanks for the info practice makes perfect i hope lookeing forward to doing damper. there was gas/beads model for sale [not a cobb] but it looked a bit big and not stainless bit dearer about $275.00 safe driveing mal b
