Trek recommendations - Uluru to Melbourne to Perth

Hi all,
I'm looking at our first real family outback trek for August - September next year. Have about 6 weeks of leave to use up and are currently planning:
Perth -> Uluru via
Great Central Road
Uluru -> Warragul and spend time time at Mt Baw Baw (have relatives near there)
Warragul ->
Perth
We've got a 2001 Jackaroo (petrol/LPG) and a solid softroader camper trailer, so can handle gravel and rough roads but not anything requiring high clearance (upgrading the camper in a couple of years). I've spent a lot of time out bush with work, so am used to planning, safety etc for remote
places, just not too familiar with good
places to go outside of WA... we're also budding ornithologists, so always enjoy
places with unique flora and fauna.
Recommendations on the best route off the beaten track from Uluru onwards would be appreciated. We've seen the Oodnatta Track and Finke treks the website for Uluru -> Warragul and maybe the Holland or Dunn Track on the way back to
Perth - we'll head back along the south coast of WA for some
wildflowers too.
Really looking forward to getting away from it all with the family a bit more now the kids are a bit older (3 and 5 yrs old)!
