Useful site; thanks Andy.

What would folk describe as the voltage that effectively equals flat in a 12v battery.

That site mentions 10.5 v for capacity rating purposes. Too low for real life?

Yes, if it reads 10.5v or less after sitting unloaded for a few hours it's either flat or stuffed.

If it drops to 10.5v while driving a load it's probably OK (which is why inverters etc have a low voltage cut out at that level), just run out of capacity. Don't leave it that way. Charge it fully and then let it stand for a few hours. If it then reads 10.6v or more it's probably OK.

On load it will probably drop to around 12.2v which is OK if it stays that way, if it drops below 12v straight away, it's cactus.
