could be a few things, when was the last time you checked the air filter,if its starving for air, the air fuel ratio is out and the engine could be overfuelling, causing it to
cook,on a
hill the turbo will be trying to work but cant unless it gets good air supply to mix with the diesel for a good clean burn, may also be an injector or turbo problem, but these engines are pretty good, might wanna start at air filter,im looking at buying one of these rodeos, other than this prob is it a good rig

The accelerate pedal brakes out of the floor as is fly by wire and don't get full throttle.

Change air filter and fuel filter first.

When my work ute did that it was the fuel filter -a load of dirty fuel - change the filter and the problem went away. The temp. goes up because its running too lean
Hope yours is as simple to fix
Cheers Kev
