Its a concern as to how good the meat your buying these days is!,the useby date may not be correct, We got caught out last weekend with some steak, purchased friday night,and when put on a outdoor plate Saturday afternoon up in the camping area, Pheeeeew!!!near cleared the place out..lol.

The dye additive was used in this lot i think!,Even though we had it replaced no questions asked,it can stuff your day up!.

Further to that - with cyrovac - the meat you buy may be up to three months old... still edible but fresh?

Ummm... the whole purpose of cryovacing is to keep meat "edible".

When you get right down to it, what does "fresh" really mean in terms of beef? A beef carcase is always left to hang, maybe only a few days, but generally the longer the better. Once it was left hanging until mould spots appeared, on the basis that the mould acted as a tenderiser. Is is "fresh"? Maybe not. Is it edible - definitely.

Not only meat. Apparently fruit and vegies can be stored for up to 12 months before it gets to the supermarkets.

Prime gourmet beef is often hung for over 4 weeks before being sold to restaurants - you might have been into yours a bit early ? :-o)..............

Hi Axle,

I get my meat from my brothers farm and it is surprising what passes for a top quality steak nowadays. Normally get some nice eye fillet off the bro as long as I'm his dogs body when we slaughter them.

Had a night out (work paid) at a classy (read exxy) joint in the rocks in Sydney and it was ordinary. No where near as "home made".

look for the whitest fat you can find!!!! the whiter the fat the fresher it is.

thats from a butcher i know and he is a darn good one too.

Jersey cattle have yellow fat, most others are white unless they are crossed with Jersey at some point in their heritage!

You are so right Axle, it can happen anywhere.

Just arrived home after a visit to the big smoke..(Adelaide for those who don't know)

Stopped at a hotel in Clare for a meal...just a pub meal, however the 'fillet mignon' was not cheap and it was more than just tainted..it was off.

Took it back and the response was "Oh really, would you like a snitzel? or maybe a desert?"

Unusual for me but too tired to complain..toodled off home but will NOT eat there again..

Stephen L be warned, it was the middle one..
