We just removed the microwave from our caravan and installed a Breville Pronto convection oven.
There are a number of brands around.
I just went into a couple of stores with a tape measure, the big difference is in the quality.
The only compalint I have is that the door need some form of outside assistance to stay closed in the caravan enviroment.

i would prefer a combined micro/convection oven.
Has to fit in existing space.

We looked at a Panasonic convection /microwave oven as they don't have a
turntable which means you can put a rectangular dish in the oven that takes up the full oven. This particular model has the beam for the microwave in the top of it and the beam is made to rotate. Sounds great but when you read the fine print it requires 10 cm clearence on each side and i think it was 20 cm clearence at the top. Couldn't afford to waste that much space, and therefore more suited to sit on a bench , but, bench space is too critical as
well. Had to give it a miss.
Would be careful about replacing a microwave with a convection oven as i would assume they all need a certain amount of space due to the heat in the cooking process. Not worth risking the van for it.
