May is on the end of the wet, so there could be a bit of water on the crossings. I have travelled that road mid june water was up, but no problems getting through.
Check road conditions on this site closer to your departure date.

It is a fantastic trip, but we tried to travel the
Savannah Way in 2010 at the end of May and the road via Hells
Gate was still closed, so as others have said, watch the road conditions report. Also, when travelling it is also good to ask locals as some of the councils are a bit slow in opening some of the roads.
When we were there the road from
Normanton to
Doomadgee was officially closed but the locals at
Normanton said the road was fine. They said the council does not open it until latter to save money by not having to grade it. We went that way and the road was perfect and obviously used a lot, despite the closed sign.

Get caught driving on a closed road without permission and you could be up for a fine of $1,000 per wheel.
Slide show from 2007.
