Tuna Sushi

Only use freshly caught fish for this recipe. We used Tuna caught in the waters off the Ningaloo Reef.


  • Raw fresh tuna (filleted)
  • Wasabi paste
  • Mayonnaise
  • Nori sheets
  • Japanese Sushi Rice
  • Japanese Rice Vinegar
  • 2 tbspns caster sugar
  • Fresh carrot
  • Julienne strips of Lebanese cucumber and/or fresh avocado
  • 5 Eggs
  • Light Soy Sauce
  • Pickled ginger


  • Step 1Cook rice according to packet instructions
  • Step 2Set aside to cool for about 10 minutes
  • Step 3Combine vinegar & sugar in a bowl, then pour over cooked rice. Mix evenly through rice.
  • Step 4While rice is cooking, prepare filling ingredients. Omelette: Mix eggs and 1tbspn soy in a small bowl, pour into hot frypan and cook like an omelette, cut omelette into strips and remove. Cut Lebanese cucumber (or avocado) into thin strips and set aside. Peel & grate carrot and set aside. Thinly slice raw tuna along grain. Mix together wasabi paste & mayonnaise according to taste and set aside.
  • Step 5Prepare nori sheets according to instructions, cutting 1/3 strip off width and laying in centre of sheet before topping with rice
  • Step 6Lay tuna & fillings in centre of rice and roll using bamboo mat
  • Step 7Cut sushi and serve with wasabi mixture, pickled ginger, and soy sauce in dipping bowls.
