Bacon Bones and vege soup

A thick hearty soup with lots of veges, beans and of course bacon bones


  • 6 meaty bacon bones
  • 1 cup Italian soup mix
  • 1 cup Pearl barley
  • 1 large onion - rough chopped
  • 4 cloves garlic - fine sliced ( more garlic if you wish)
  • 2 carrots - coarse grated
  • 1 parsnip - coarse grated
  • 1 swede - coarse grated
  • 1 capsicum- rough chopped
  • 4 sticks celery incl green tops - thin sliced
  • 1 pot Spring Vegetables soup mix
  • Salt and black pepper to taste
  • If you are into chilli - add as much as you desire


  • Step 1Place all ingredients in a large stockpot, covet with1/2 chicken stock and 1/2 water.
  • Step 2Bring to the boil and simmer for at least 2 hours (you want the bacon meat to fall off the bones)
  • Step 3Take off heat and with a couple of pairs of tongs, remove the meat from the bones, discard bones and return meat to pot.
  • Step 4Reheat and serve with thick crusty bread. Use real butter as the spread
  • Step 5Like most homemade soups, it's better the day after
