Curried Chicken and Rice


  • ½ cup chopped celery
  • ½ cup chopped onion
  • ¼ cup slivered almonds
  • 2 tablespoons butter or margarine
  • ¾ cup of rice
  • ¼ cup raisins
  • 1 teaspoon curry powder
  • 2 teaspoons sweet chilli sauce
  • 2 cups chicken stock
  • 4 chicken thighs chopped (inch cubes)
  • Salt and Pepper to taste


  • Step 1In a heavy skillet or electric fry pan (not too hot), saute chopped chicken until lightly browned, remove and place in a container.
  • Step 2In the same skillet cook celery, onion and almonds in butter until vegetables are transparent and almonds are slightly browned.
  • Step 3Stir in rice, raisins and curry powder. Add chicken stock and bring to the boil. Cover and simmer 15 minutes over low heat.
  • Step 4Add chicken and sweet chilli sauce, cover and continue to cook about 5 minutes more or until rice is tender and chicken is hot.
  • Step 5Season to taste
