Coconut Lime Cured Fish

This is a variation on the popular Fijian raw fish dish adjusted for camping. It's a very easy dish but needs to be prepared in the morning ready to serve chilled at night for dinner. Only use freshly caught fish as it is eaten raw (cured in lemon/lime juice).


  • Fresh raw fish fillets
  • 1 cup lemon (or lime) juice
  • 2 chopped tomatoes (fresh or tinned)
  • 1/4 cup coconut cream


  • Step 1Mix lemon or lime juice, chopped tomatoes, & coconut cream together and set aside.
  • Step 2Chop fish into bite size pieces (cubes)
  • Step 3Combine fish and marinade together and place in a container that will fit into your fridge. Cover with a lid and leave marinade to "cook" the fish in the fridge for at least 6 hours.
  • Step 4VARIATION: add capers & green peppercorns if you like a bit more zing!
  • Step 5Serve chilled with a crunchy salad watching the sunset on the beach!
