French onion Lamb Casserole (pull apart)

  • 2 tablespoons olive oil
  • ½ a leg of lamb.
  • 3 carrots chopped
  • 2 onions sliced
  • 40g packet French Onion Soup mix
  • 2 tablespoons cornflour
  • 2 cups water
  • 1 cup port
  • 1/4 cup tomato paste
  • 1 tablespoon brown sugar
  • Cracked black pepper to taste
  • Mashed potato and peas, to serve


  • Step 1Heat oil in camp oven over a medium heat. Brown lamb all over. Now cook onions till clear in colour. Add carrots.
  • Step 2In a separate pan combine soup mix, cornflour, water, port, tomato paste and sugar. Cook for 5 minutes. Pour over lamb.
  • Step 3Cover with lid. Cook on Low heat for 31/2 to 4 hours. Season with pepper.
  • Step 4Serve lamb over mashed potato with steamed peas. No need to slice this lamb. It will pull apart.
