Couscous Salad

This is a quick way to whip up an interesting side dish to accompany BBQ meat.


  • 1 cup couscous
  • 1 cup liquid chicken stock (or water)
  • 1-2 tablespoons olive oil or butter (optional)
  • 1/2 cup chopped capsicum (fresh)
  • 6 pieces of semi-sun dried tomatoes (drained & chopped - from a jar)
  • 1 generous tablespoon salad dressing of your choice
  • 1 tablespoon "Gourmet Garden" herbs of your choice (eg. Italian Herbs)


  • Step 1Bring the water to a boil (in a billy over fire or on a gas stove)
  • Step 2Add butter/oil & bring to boil over high heat.
  • Step 3Quickly pour the couscous into the liquid and remove from heat. Stir to mix then cover the pan and let it sit for 5 minutes.
  • Step 4Meanwhile, finely chop & dice the other ingredients
  • Step 5Squeeze out 1 tablespoon of Gourmet Garden herbs and combine with dressing. Drizzle into salad vegetables to marinate.
  • Step 6Lift lid off couscous to check that all liquid has been absorbed. Fluff with a fork to separate grains.
  • Step 7Add marinated salad vegies and mix to combine flavours.
