Big Bad Boy’s Ribs

The meat on these ribs just fell off the bone. You will not need a knife.


  • Pork Ribs about 11/2 kilo.
  • Marinate
  • 1 2lt. coke (not diet)
  • Pork Dry Rub
  • 2 tablespoons brown sugar
  • 2 teaspoons salt
  • 2 teaspoons onion powder
  • 2 teaspoons pepper
  • 2 teaspoons ground cumin
  • Sauce
  • 1 tablespoon oil
  • 1 onion finely chopped
  • 1 400gram can of chopped tomatoes
  • 2 cloves garlic or 2 teaspoon of minced garlic from jar
  • 85 grams brown sugar
  • 3 tablespoons vinegar
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons tomato sauce


  • Step 1Cut skin off Ribs. Marinate in coke overnight. Drain well and pat dry.
  • Step 2Mix all the gear for the dry rub. Now rub this all over the Ribs and wrap in foil.
  • Step 3Let it marinate for one hour.
  • Step 4Put the whole parcel on a rack in the camp oven and slow cook at 160 deg. For 11/2 hours.
  • Step 5While this is cooking make up the sauce.
  • Step 6Brown the onions then add the garlic. Now add the rest of the ingredients and simmer for 30 min.
  • Step 7After 11/2 hours unwrap the ribs. Put ribs in a bowl and tip ½ the sauce over ribs. Coat all the ribs.
  • Step 8Now return the ribs to the camp oven and cook for another hour.
  • Step 9Now paint the ribs with more of the sauce and place on a BBQ and grill till you get a nice caramelizing of the sauce on the ribs.
  • Step 10Serve.
