Prepare hard boiled eggs and keep handy for quick, easy lunches by the side of the road.


  • 1 small tin of flavoured tuna per person (tomato & chilli used here)
  • 1 hard boiled egg per person
  • 1 whole Lebanese cucumber
  • 1 whole peeled fresh carrot
  • Any other available greens for garnish (shallot used here)


  • Step 1Slice eggs into quarters
  • Step 2Slice cucumber lengthways and halve
  • Step 3Slice peeled carrot into julienne strips
  • Step 4Toss together in serving bowls with tuna on top
  • Step 5Garnish with slices of fresh shallot
