Savory Breakfast or Lunch Bread Pudding

Savory Bread pudding that will satisify the whole tribe.


  • 5-6 large slices ham sliced Julian
  • 1 large brown onion, thinly sliced
  • 1.5 cups milk, 2 cups if you don't use cream
  • 1 cup thickened light cooking cream (optional)
  • 1-2 tablespoon olive oil
  • 4-5 eggs based on size
  • 1/2 red pepper, thinly sliced
  • 2-3 tablespoons finely grated cheese (more if you like)
  • Handful finely chopped parsley (much as you like)
  • Slices bread (as many as takes for dish)
  • 1 chilli thinly sliced seed removed (optional)
  • 1 teaspoon smoky paprika


  • Step 1Preheat camp oven or oven(180C) to a medium heat
  • Step 2Lightly grease a oven dish with oil and cook onions stirring until translucent then add your ham to just heat thru.
  • Step 3Beat milk, cream, eggs and parsley in a jug.
  • Step 4Layer bread in oiled dish put some of the ham and onions mixture and peppers between bread slices building up to top of dish or when you run out of ingredients.
  • Step 5Now pour egg mixture over the works! Grate some cheese on to top. Season with pepper or paprika, I prefer the smoky one.
  • Step 6Heat for 35-45 minutes cheese will look golden and egg is set. Let cool for 10 mins and dig in.
  • Step 7Naturally you can add leftover snorkers (pork sausages), perhaps bacon…its all good.
