Eaten it in quite a few ways, and it is really tasty.
Camel (curried) pies at Birdsville, sausages (I think it was) at Parachilna (feral mixed grill), and quite a few places throughout the Territory will serve camel.
There is a restaurant in Alice Springs that will serve up a Camel Shank.

Same can be said also for eating kangaroo, rabbit, goat. All tasty, but I suspect the powers that be who market beef, lamb, chicket etc keep a lid on these other tasty alternatives. Even possum is supposed to be a tasty dish.

every year a bunch of old mate of mine get together & we have a BBQ & I guy always tries to have the biggest steak so the rest of us order 4 of the biggest steaks you have seen (camel) & for 3 years now he has not caught on & it tastes great (we do marinate it just so he can't tell)
I buy them from a butcher in S/W Sydney he tells me, hey bro we have the healthiest & best looking camels in the world cause there gunna taste goood, overseas camels ugly & taste horrible I only buy goood Aussie camels & he's right they great
