I've got mine in a neat dash pod made in sydney by a mob called "Dept of the Interior".
I sent them my radio, speaker and a voltmeter and switch. They fitted it all and it looks like OE.
Others have them mounted down on bottom of dash above either left or right knee. If I was doing it again, I reckon I'd get one of those remote head units and mount it at the back of the gear shift (in front of the ashtray). Main unit could go under seat etc.
I've got shytloads of gear......HF remote head sits in front of gear shift (blocks cigi lighter socket, but that has a plug permanently located for mobile phone in-car kit)......I've removed the whole ashtray unit and replaced with a piece of craftwood to which is screwed 2 speakers (one for mobile phone, other for HF radio)........the cradle for the mobile phone sits in the little hollow behind the transfer case lever.
There's plenty of room, you just have to be brave enough to drill some holes in the plastic.

When I pick mine up shortly, I'm going to remove the big mother of a standard stereo, and fit a more athsetically pleasing head unit in there and put my uniden uhf right underneath it.

Dunno if common, but it worked in the GQ.

Austravel,
In my GU the main bit is under the passengers seat, the remote head is mounted just in front of the gear levers slightly to the right and the remote speaker is just to the left of the remote head. Looks quite neat even if I say so myself.
Keep the shiny side up

If you send me your email address, I'll send back some pics of my GU in which I have located the unit in the dash above the glovebox. This is the spot in which the airbag would be, if you had that model. But you don't, so give it a whirl.

I have mounted mine (slimline GME) in the console where switch blanks are next to the passenger/console storage, bit of mucking around to fit and not the easiest to see sometimes but out of the way. A dash pod or smaller stereo would be the ideal spot.

agree with rick, remove the glove box temp, unscrew the panel where the airbag isnt ( 6 screws from memory) . cut out plastic behind panel (keep screw holes).
create shelf from bottom screw holes to solid metal bar (which will be revealed).
my remote head has the bracket fixed with solastic under the a/c recirc area, never budged for years.
one of the firms mentioned above (min of the interior i think) sells something for this area and has a cutaway picture on their site.
good luck
