Hi Lewis Lee
Don't know how far you want to travel, but
Einasleigh in Qld runs a bush racing meeting and rodeo every
Easter and we always attend as it is a great weekend.
Accommodation is another thing, you would have to
camp at the rodeo grounds or find a spot along the river as the only caravan park is booked out by our group.
Cheers Ray

The Snowy Mountains in NSW has a few events happening each Easter.
Jindabyne has an Art Show and "Lake, Light, Sculpture" which is a sculpture walk (free) around the shoreline (and sometimes in the waters) of
Lake Jindabyne - the sculptures are lit at night (from under, above or within) which makes for 2 very different perspectives and the buzz of 5000 people walking around each night is amazing!! Last year's winner was a 30 foot dragonfly made with stained glass, light at night from inside - awesome!!

Thredbo has a festival of fun things happening including Jazz Festival and Berridale and Adiminary have good old country fairs going.
Corryong (just over the border in Vic) has its Man From Snowy River Festival going on too.
They are all within 2 hour drive from each other.
