I don't think a course is going to give you any advantage, even if one is available.

There is some excellent reference on both brake adjustment and repacking bearings, plus other technical information on the Campertrailers.org Technical Tips page.

Have a look, print the relevant topics and "have a play" until you are comportable with the procedures.
